Dice potatoes into small pieces. place in a 9×13 baking dish. sprinkle the dry ranch seasoning, kosher salt, and pepper on the potatoes and toss to coat evenly. pour the ranch dressing on top and toss again to coat evenly. cover with foil and bake for 45 minutes to 1 hour in a 425 degree oven. stir every 15 minutes.
