Make cheesecake filling. to the bowl of a stand mixer (or a mixing bowl if using a hand mixer), add the softened cream cheese and beat on a med speed until light and fluffy. add 3 4 cup of the sugar and beat until combined, scraping down the sides if needed. add eggs, one at a time, beating after each addition.

Caramel Apple Cheesecake Bars The Girl Who Ate Everything Bake 15 minutes or until lightly browned. in a large bowl, beat cream cheese with 3 4 cup sugar in an electric mixer at medium speed until smooth. then add eggs, 1 at a time, and vanilla. stir to combine. pour over warm crust. in a small bowl, stir together chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg. Add brown sugar, pecans, oats, salt and butter and pulse a few times until pecans and oats and broken up a bit and mixture is uniform and sandy. press half of streusel into the prepared sheet pan. bake until lightly set, 8 9 minutes. set aside to cool slightly. Distribute evenly over the cheesecake layer in the baking dish. in another medium bowl, combine ingredients for streusel topping: brown sugar, flour, oats, cinnamon, and melted butter. mix welll until a coarse meal is formed. sprinkle evenly over apple layer. bake for 30 40 minutes until streusel is golden.
