Dill Pickle Relish Healthy Canning Instructions. place the diced cucumbers, onion, bell pepper, and garlic in a large mixing bowl. combine with the salt and pour water over the mixture until covered. let sit for at least 6 hours or overnight. drain the cucumber mixture in a colander, rinse thoroughly with water, and drain again. Emptying each batch into a large glass or stainless steel bowl. mix the pickling salt into the cucumbers. pour cold water over the cucumbers. cover the bowl with a clean towel and let sit at room temperature for 2 hours. meanwhile, prepare the boiling water canner, canning jars, rings, and lids.
